  • 4 mini baguettes from HUTTWILER glutenfree
  • 300g chicken breast fillets
  • 30g bacon
  • 1 sprig thyme
  • 2 large tomatoes
  • 8 lettuce leaves
  • 0.25 bunch of rocket
  • Olive oil
  • salt and pepper
  • 2tsp Dijon mustard
  • 2tsp honey
  • 1tsp lemon juice
  • 2tsp lactose-free cream cheese

It’s as easy as this

  1. Prepare the baguettes according to the package and cut in half lengthwise.
  2. For the sandwich cream: Mix the mustard, 2 tbsp olive oil, honey and lemon juice with salt and pepper in a bowl. Add the cream cheese and mix until a smooth cream is formed.
  3. Fry the chicken breasts in the pan with olive oil, along with the bacon, a sprig of thyme, salt and pepper.
  4. Wash and pat dry the lettuce and arrange on the baguettes. Then place the chicken breast and sandwich cream on the lettuce. Arrange the tomato slices on top. Close the baguette, take a bite and munch, munch, munch – it’s all gone! The perfect excuse for another one!
